 DINER'S PERPECTIVE - 

 

 

I am a big fan of traditional Vietnamese banh mi sandwiches and this more updated version is a respectable rendition. Made with pork butt, pork belly and chicharrones (crispy fried pork cracklings) Michael Voltaggio (ink sack) has done a nice riff of one of my favorites. The pickled daikon radish and carrots bring the familiarity of a true banh mi while the crunch af the chicharrones is new and the perfect addition to the meatiness of belly and butt. Sandwiches are a comfort food and this here is quite comforting indeed.
