Currant Berry, Red

Red Currant Berries are most often consumed cooked, as they are very very tart.  They should be cooked very slowly for 3 to 5 minutes in a small quantity of water or juice (just enought to keep them from sticking).  Sugar can be added after cooking.  They freeze well whole, with or without sugar, and they will be more flavorful if used before they are fully thawed.  Red currant juice makes an excellent substitute for vinegar in vinaigrettes. They also are quite nice as garnishes on desserts and cheese platters.
