Also known as Haricot verts and gourmet green beans. Approximately 80 to 100 beans per pound. Generally 3’-6” in length and less than pencil thin, these beans are the envy of gastronomes across the globe. With highest prices between Christmas and New Year’s Day, these beans are best kept cold, preferable 34-36 degrees F. Young beans may also have a bit of a purple hue to them, but this does not mean the beans are bad or old.  Mist if dry, and although they produce no ethylene gas, they are susceptible to it.
