Also known as Garlic Scapes, their flavor is a bit like a cross between garlic and asparagus. When hardneck garlic gets close to maturity the whistle is formed. Essentially, the whistle bulb contains the floral part of the plant. Scapes must be harvest in the short window when they are still tender and before they go to seed.
