Pansies lend a wonderful touch of color to salads. They come in several colors: white, purple, yellow, pink, rust, etc. Pansies have a a slightly sweet grassy flavor. The petals are extremely mild, but if you eat the whole flower there is a bit of a wintergreen overtone. Use them as a garnish in fruit salads, green salads, soups, or desserts.
