The Galia melon has a delicious, complex sweet flavor – a bit of a cross between cantaloupe and honeydew.  It is about the size of a cantaloupe.  Its skin resembles a cantatoupe skin, and its flesh is light-green and smooth-textured.  Substitute Galia Melons for cantaloupes or honeydews in recipes.  Slice or cube them, and serve as a refreshing chilled snack.  They make an excellent chilled soup or dessert sauce.  Add them to fruit salads.  Wrap them with proscuitto and mint.  They also are a wonderfully flavorful ingredient for punches, smoothies and margaritas.
