Also called the “Yellow-Melon” – the Korean Melon is elongated/oval and about the size of a medium-sized papaya. It’s skin is ribbed and is a beautiful bright yellow color. Its flesh is crisp and white; flavor resembles a cantaloupe, but with a firmer texture. The Korean Melon has a small cavity with numerous seeds. Korean Melons may be halved, and filled with cottage cheese or ice cream for a sweet treat. Cube them or slice them and use as garnish. Wrap them with proscuitto and mint. Scoop “melon balls” out of the Korean Melon for a fun-shaped fruit salad ingredient or dessert garnish.
