Apricots are small golden stonefruits with an edible yellow/golden skin, inedible pit, and a yellow flesh that has a fabulous sweet, peach-like taste. They taste like a stronger, more flavorful peach. They are delicious out-of-hand, when ripe. They may be added to salads, ice creams and tarts. They make wonderful sauces & syrups. They can also be grilled or poached and served with chicken or pork entrees.
