Green apricots are regular apricots before they have had an opportunity to develop into the golden yellow-orange plump fruit. Used in pickling, chuntney and even beer making, green apricots are usually about quarter size and may have some red blushing on their fuzzy little exteriors. As you would suspect, they are only available a short window, prior to regular apricot season.
