Hen of the wood, Maitake, Ram’s head or Sheep’s head all refer to a beautiful cluster styled mushroom with spooned shaped grayish/brownish caps. Native to Japan as well as North America and is prized as a medical mushroom in Chinese and Japanese cultures. Typically available beginning in late August thru late November, growing at the base of trees, particularly oaks.
