Generally available all year from the USA and Mexico. Also known as Lion’s Tooth, store dandelion greens in a plastic bag lined box and keep covered, and mist as needed to keep the leaves crisp. Store between 32-34 degrees F. Young leaves may be enjoyed fresh in salads. Larger, more mature leaves should be blanched briefly to remove bitterness. They are excellent steamed and enjoyed as a side dish or used in warm salads. High in iron.
