Approximately 3-4 heads per pound, it is best store cold and dry, in a plastic bag lined box, between 32-34 degrees F. Outer leaves act to protect the inner leaves, so unless the outer leaves are decaying and wet, leave them on to protect the balance of the head from drying-out, or decaying faster. This member of the chicory family is loved for its long  ruby-red and white leaves, and distinct, bitter flavor. Ideal for grilling, Treviso radicchio makes an outstanding side dish, when combined with grilled fennel and/or Belgian endive. It may be blanched before being grilled or otherwise cooked, to reduce bitterness. However, some people prefer a more bitter-eating radicchio: you be the judge.
