Outer leaves act to protect the inner leaves, so unless the outer leaves are decaying and wet, leave them on to protect the balance of the head from drying-out, or decaying faster. This member of the chicory family is loved for its ruby red and white leaves, bitter flavor and crispness. Heads are tightly packed layers of tender, thin leaves. Superb fresh in salads or halved and grilled, then served as a side dish or salad feature.
