Prepare as you would larger artichokes, only cook them for a shorter period of time. If enough of the outer leaves are first pulled off, the entire specimen may be eaten. Store between 32-34 degrees F, cover with paper and top ice as needed, but do not allow product to sit in melted water. Artichokes do not produce, nor are they affected by ethylene gas.
