This purple and white speckled bean consists of a pod about 5”-6” in length with small, edible pods within, although the entire bean is edible. If cooked for any length of time, the purple color will disappear. Yield: 30-40 beans per pound. Dragon Tongue beans are best just barely cooked, so that they retain some of their natural purple speckles. Then, marinate them and serve cold upon salads or as a garnish with other beans. These beans are flat and although they differ slightly in taste from green or yellow wax beans, their flavor is distinctively that of fresh beans, but less so than other varieties. Best stored between 32-34 degrees F. Mist if dry, and although they produce no ethylene gas, they are susceptible to it.
