Clearly cool looking Brussel Sprouts stalks are not really edible. The little heads are of course but the stalks do provide convenient storage for them until you’re ready to utilize them, keeping them fresh and moist. Primarily a fall and winter crop, Brussel Sprouts are great roasted, shaved into salads or their leaves peeled off one by one and sauteed. The slightly bitter yet sweet flavor pairs nicely with bacon or pancetta, apples and rosemary.
