The green jalapeno is the unripe version of the red which often ships with white veins on the outer skin. This does not affect the flavor or quality. In fact, some chile aficionados prefer the cracked, or veined chilies over unblemished ones. Delicious roasted, stewed or pickled, they are delicious cooked and raw. Heat ranges from hot to very hot. Approximately 25-30 chilies per pound. Store between 45-55 degrees F, and keep away from ethylene gas producing items. Fresh chilies do not produce ethylene gas.
