Generally aavailable year-round from the USA and Mexico. Also known as the caribe or guero chili, it is also mistakenly referred to as a wax pepper, due to its thick, crunchy walls. With a heat force ranging from mild to hot, they are wonderful pickled, as they have a sweet finish and somewhat waxy texture that’s perfect for eating out-of-hand.
