Pieces average between 6” to 12” inches in length, approximately 6-8 pieces per pound. It is important to note that this variety is typically not as uniform in size and shape, as is Japanese eggplant. It is often serpentine in form. Best stored between 50-55 degrees F, and is easily chilled, so it is best protected with a layer of paper. It produces no ethylene gas, but it is sensitive to it, so keep it away from fruits and vegetables emit this gas. Distinguished by its light purple, neon-like color (it’s gorgeous), this eggplant has a very thin, tender skin that is sweeter than most other varieties. Excellent sliced for frying, halved, stuffed and baked, and grilled. It’s color will diminish depending upon the length of time cooked.
