Japanese eggplant is appreciated for its relatively thin skin, uniform shape and nutty flavor. Averaging between 5”-6” in length, with a diameter of 1”-2”, one piece, halved, makes a perfect, single serving. Delicious grilled, fried, stuffed and baked, stir-fried, or sliced into a savory soup or stew, Japanese eggplant is an exquisite culinary treat. Approximately 6 to 8 pieces per pound. Sensitive to cold temperatures, it is best kept covered with paper, away from odoriferous foods. Although it does not produce ethylene gas, it is sensitive to it, so keep away from other ethylene producing produce for a longer shelf life. Best temperature for storage: 45-50 degrees F.
