There are literally, hundreds of varieties of sweet potatoes, many of which are of the “tropical” variety, which have become staples in many parts of the world. This variety is light purple inside when cut and uncooked, and turns to a deeper shade of purple when cooked. They are gorgeous, sweet, and versatile. Mashed, baked, made into chips, the choice is yours. Best stored between 45-50 degrees F, do not mist or ice. They produce no ethylene gas but are somewhat sensitive to it, so keep covered with paper and away from gas producing and odoriferous produce.
