Naturally colored, golden-meat potatoes have become most popular. These potatoes, along with the Yellow Finns or Yellow Finnish potatoes, and the German Butterballs, makeup the majority of the family of potatoes becoming known as the Golden-Butter. Because they have a golden colored flesh and a natural butter flavor, they are perfect for those on restrictive diets as they are delicious “naked” if you will, even without salt and butter! Although they do not produce ethylene gas, they are sensitive to it, so keep away from other ethylene producing produce for a longer shelf life. Best stored covered, between 45-50 degrees F.
