Generally available all year from the USA and Mexico. Best kept between 45-50 degrees F, covered in paper and kept away from ethylene gas producing fruits and vegetables. Its meat is off-white with small, clear seeds that are virtually unnoticeable. Its flavor is that of squash and cucumber and may enjoyed raw, or in stir-fry and vegetable sautés. For best results, peel before using. Approximately 1-2 pieces per pound.
