The White Beech Mushroom is bright white, with a long, thin edible stem and small button-like cap.  The mushrooms grow and are packed in small clusters.  Trim the very end off of the bottom of the cluster, then the entire mushroom is edible.  The flavor is mildly fruity and nutty.  The texture is firm, and slightly crunchy.  These mushrooms add lovely white color to any dish.  For best flavor, sautee Beech Mushrooms.  Combine with other mushrooms for a variety of flavor.  Or serve them on their own.  Add to sauces and soups.  Or serve atop beef, seafood or poultry.  They’re also a wonderful pasta or risotto ingredient.
