Maitake Mushrooms, also called “Hen of the Woods,” grow in clusters and have fan-like layers.  They are brown in color, and have a good, somewhat firm texture.  Maitakes have great mushroom flavor which enhances poultry, seafood, beef and pork.  Add Maitakes to stir frys, soups, sauces and vegetable melanges.  Saute for best flavor and texture.
