A member of the mustard family, it is also known as Roquette and Rocket. Available from the USA and Mexico, this green has a peppery, rhubarb-like tartness that works well in a salad of its own, or with other lettuces and greens. Store arugula between 34-36 degrees F, and keep dry. Fluff occasionally to prevent early decay and promote air circulation. Product will yellow quickly when held at room temperature, or not cold enough, so keep this in mind when using.
