Available from the USA and Mexico, basil, which means “king” in Greek, is truly the king of fresh herb consumption. Sensitive to cold temperatures, it is best stored between 50-55 degrees F, and should be kept from drafty conditions. Black basil has been chilled, and brown basil has become too hot. Basil may be consumed raw or cooked, and is the perfect addition to any tomato-based offerings. Basil that is less-than-perfect in appearance is perfect for making fresh pesto.  Also, avoid laying fresh basil on cold or cool surfaces for prolonged periods of time, as it will discolor and wilt rapidly.
