Approximately 90-100 peas per pound, they are best kept between 32-34 degrees F, and dry. Entirely edible, there is a stringless variety that we stock at all times, unless they are not available. If not stringless, the string is tough and runs along the outer side of the pea, and should be removed before eating, as it is irritating, at best. Otherwise, snap peas, also known by the trademarked name Sugar Snap peas, are rounder than snow peas, plumper and generally sweeter, too. Wonderful sautéed with pearl onions, snap peas are also terrific in stir-fry and cold vegetable platters.
