Also known as the Sweet Tooth mushroom and the poor mans’ chanterelle, the buff colored hedgehog has tooth like extensions under its cap rather than gills. When young, these small teeth are firm. Delicious sautéed in butter, or in a cream-based mushroom soup, they’re fantastic. A very pleasant flavor that is more like a cultivated mushroom than a wild one. Store mushrooms between 32-34 degrees F, in a well-ventilated box with a paper or cardboard cover, and keep dry. Mushrooms neither produce, nor are affected by ethylene gas. Store away from odoriferous foods.
